Recipe for … Broccoli salad

This is not the first broccoli salad on my blog and certainly not the last composition of this type. Broccoli salads are really easy to prepare, because the vegetable just needs to be lightly scalded with boiling water. It then remains delicious, crunchy and only softens slightly. Of course, in this case, the broccoli should be cut quite finely, large pieces would remain raw.

Ingredients:
– 1/2 broccoli– half a cup of cooked quinoa– half a red onion– half a cup of grated chedar cheese– a handful of dried cranberries– 1/3 cup of olive oil– 2 tablespoons of apple cider vinegar– 1 tablespoon of dijon mustard– 1 tablespoon of honey– half a clove of garlic– salt, pepper

How to prepare… Step by step

Preparation:

  • Cook the quinoa according to the recipe on the package, this should take about 8 minutes.
  • Meanwhile, cut the broccoli into tiny florets. Boil water and pour boiling water over the broccoli for 2-3 minutes.
  • In the meantime, cut the onion into small cubes and grate the chedar cheese. Also chop the cranberries to make them fine.
  • In a bowl, mix all the ingredients for the sauce: olive oil, honey, vinegar, mustard, a little spices. Stir very vigorously until a fairly thick sauce emulsion is formed.
  • In a bowl or directly on a plate, create a salad by mixing broccoli, quinoa, cheese, onion, and cranberries. Serve with the prepared sauce.
