Recipe for … Legume salad with salmon

I hope that with my previous salad recipes I persuaded you to eat legumes. They should be included in every diet, and their multitude allows you to prepare many delicious dishes. Many pods need to be soaked before you cook them. It is best to follow the recipe on the packaging.

Ingredients:– 1/2 cup of legumes: e.g. lentils, chickpeas, small red or white beans– 1 heaped tablespoon of chopped parsley– 1 tablespoon of apple cider vinegar– 2 tablespoons of olive oil– 1 teaspoon of red mustard– a pinch of salt and pepper– a few slices of smoked salmon– 1 egg– 1 tablespoon of vinegar

Preparation

Step by step:

  • Soak the pods and cook them according to the instructions on the package. Prepare a sauce from apple cider vinegar, olive oil, mustard and a little salt and pepper. Chop the parsley.
  • Add parsley and sauce to the cooked legumes, mix. Transfer to a plate and place the smoked salmon slices on the pods.
  • Boil water in a pot (it should reach 3/4 of the height). Pour a tablespoon of vinegar into the boiling water.
  • Crack the egg into a bowl so as not to damage the yolk. Use a spoon to whirl the pot in boiling water.
  • It is made by stirring quite vigorously in one direction. Throw the egg into the middle of the whirlpool, where there is the least water.
  • Stop stirring now and give the egg 2-3 minutes to cook. Remove them with a slotted spoon and place them on the salmon.
  • Serve immediately.
