This recipe is a variety of traditional Greek salad. I added delicious and nutritious quinoa to it – this time in a light version, but a red or black version will also look fantastic. Remember that there is no lettuce in a traditional Greek salad, it always surprises me when I get such an “ala greek” in a restaurant.

INGREDIENTS:– half a cup of cooked quinoa (measured after cooking)– half a greenhouse cucumber– 2 tomatoes– half a red onion– 1 red pepper– 1/3 cup of feta cheese– half an avocao as a finishing touch to the salad– 2 tablespoons of lemon juice– 6 tablespoons of olive oil– 1 teaspoon of honey– 1 teaspoon of mustard– 1 tablespoon of warm boiled water– salt and freshly ground black pepper
Preparation
Step by step:
- Cook the quinoa according to the recipe on the package.
- Cut the vegetables into similarly sized squares: tomato, cucumber with skin, pepper, onion.
- Mix everything with quinoa, put it on plates and put crumbled feta cheese (you can also cut it into cubes).
- Prepare a sauce from lemon, olive oil, honey and mustard.
- Finally, add warm water so that the ingredients combine into a uniform emulsion.
- Season with salt and pepper and pour the sauce over the salad.
- Finally, you can decorate the salad with sliced avocado.
