Recipe for … Broccoli cream

I’ve already shown you many ideas for cream soups on the blog, including those for broccoli cream. Today I have such a basic recipe for you. I enriched my soup with the addition of cat cheese and a fresh sprig of rosemary, but have fun and create your own flavor composition. Maybe you want to serve the soup with croutons, or maybe with blue cheese or feta, tomato salsa will also be perfect, which you will decorate the soup in a bowl. This soup can be different every time.

Ingredients:

– 1 clove of garlic– half an onion– 2 pieces of celery– 400 g of broccoli – florets, without the thickest parts – olive oil – 1 liter of vegetable or chicken broth, – to serve: goat cheese and rosemary, ricotta cheese and fresh mint, croutons or others

Preparation

Step by step:

  1. Finely chop the onion and garlic. Cut the broccoli into florets, removing the thickest woody parts. Cut the celery into 1-2 cm pieces.
  2. Fry the onion and garlic in olive oil. After a few minutes, add the broccoli and celery. Simmer briefly and add the hot broth.
  3. Cook for about 5-7 minutes, until the vegetables become tender. Now use a blender to blend the soup into a uniform cream. Put the soup into bowls and add your favorite toppings, such as goat cheese and rosemary, or ricotta cheese and fresh mint.
